Koofteh with a Spiced Stuffing: A Flavorful Persian Delight

Kofta or Koofteh, the beloved Persian meatballs, are already a comfort food favorite. But what if you could take them to the next level with a delicious twist? Enter Kofta with a Spiced Stuffing—a recipe that infuses each bite with surprising layers of texture and flavor. Imagine tender meatballs filled with a fragrant mixture of chopped apricots, crunchy pistachios, and a hint of cinnamon. Ingredients:

500g ground beef or lamb

1 onion, finely chopped

1 cup cooked rice

1 egg

2 tbsp fresh herbs (parsley, cilantro, or mint), chopped

Salt and pepper to taste

For the stuffing:

1/4 cup dried apricots, finely chopped

1/4 cup pistachios, chopped

1/2 tsp ground cinnamon

2 tbsp oil for frying

Instructions:

In a large bowl, combine the ground meat, chopped onion, cooked rice, egg, fresh herbs, salt, and pepper. Mix until everything is well combined.

In a small bowl, mix together the chopped apricots, pistachios, and cinnamon. This fragrant blend will become the heart of your Kofta.

Take a small handful of the meat mixture and flatten it in your palm. Place a spoonful of the spiced stuffing in the center, then carefully wrap the meat around it, forming a ball. Make sure the stuffing is completely enclosed.

Heat the oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 6-8 minutes. Alternatively, you can bake them in a preheated oven at 375°F (190°C) for 20-25 minutes until fully cooked.
