Ingredients:
For the salmon:
2 salmon fillets (skin-on or skinless, your preference)
2 tablespoons olive oil
1 tablespoon berbere spice mix
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper to taste
For the mango salsa:
1 ripe mango, diced
1/2 red onion, finely diced
1 jalapeno pepper, seeded and finely diced (optional, for a spicy kick)
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
Salt and freshly ground black pepper to taste
To serve (optional): Injera bread
Instructions:
Marinate the salmon:
In a small bowl, combine olive oil, berbere spice mix, ginger, garlic powder, smoked paprika, salt, and pepper.
Place the salmon fillets in a baking dish or shallow bowl. Pour the marinade over the salmon, ensuring it coats the entire surface. Cover and refrigerate for at least 30 minutes, or up to 2 hours, for deeper flavor.
Prepare the mango salsa:
While the salmon marinates, combine diced mango, red onion, jalapeno (if using), cilantro, lime juice, salt, and pepper in a bowl. Toss gently to combine.
Cook the salmon:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup. Place the salmon fillets on the prepared baking sheet, skin-side down if using skin-on salmon.
Bake the salmon for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact cooking time may vary depending on the thickness of your fillets.
