½ cup panko breadcrumbs
1 teaspoon baking powder
½ teaspoon salt
1 cup chopped kimchi (plus 2 tablespoons kimchi juice)
4 scallions, thinly sliced
1 large egg, beaten
½ cup milk
Vegetable oil for frying
For the Scallion Yogurt Dip:
1 cup plain Greek yogurt
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon honey
1 scallion, thinly sliced
Pinch of red pepper flakes (optional)
Instructions:

Heat vegetable oil in a large skillet over medium heat.
Using a spoon or ice cream scoop, drop spoonful of batter into the hot oil. Flatten the fritters slightly.
Fry the fritters for 2-3 minutes per side, or until golden brown and crispy. Drain on paper towels.
In a small bowl, whisk together yogurt, soy sauce, rice vinegar, sesame oil, and honey. Stir in the sliced scallion.
Add a pinch of red pepper flakes for an extra kick (optional).
Serve the kimchi fritters warm with the scallion yogurt dip for a delicious and refreshing Korean-inspired appetizer.
Tips:
For a spicier fritter, add a pinch of gochugaru (Korean chili flakes) to the batter.
You can substitute self-rising flour for the all-purpose flour and baking powder.
Feel free to experiment with different dipping sauces, such as a sweet and chili sauce or a gochujang aioli.
Enjoy this delicious and fun twist on traditional Korean flavors!
