Ingredients:
For the Fritters:
1 cup dry brown lentils, rinsed
1 cup vegetable broth
1/2 red onion, diced
2 cloves garlic, minced
1/2 cup chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon curry powder
1/2 teaspoon chili powder (optional)

Instructions:
Cook the lentils: In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender. Drain and set aside to cool slightly.
Sauté the aromatics: While the lentils cool, heat olive oil in a large skillet over medium heat. Add diced red onion and cook for 3-4 minutes, or until softened. Add minced garlic and cook for an additional minute, until fragrant.
