Ingredients:
For the Dough:
2 cups all-purpose flour
¾ cup hot water
¼ cup cold water
½ tsp salt
For the Filling:
1 lb ground pork
6 cloves black garlic, minced
1 tbsp soy sauce
1 tbsp Shaoxing wine (or dry sherry)
1 tbsp grated ginger
1 tbsp sugar
1 tsp sesame oil
2 green onions, finely chopped
¼ cup chicken broth
¼ tsp white pepper
For the Gelatinous Stock:
1 cup chicken broth
1 tbsp soy sauce
1 tsp sugar
1 tsp gelatin powder
Instructions:
Make the Dough: Mix flour and salt, gradually add hot water, then cold water. Knead until smooth and let it rest.
Prepare the Gelatinous Stock: Heat chicken broth with soy sauce and sugar, stir in gelatin powder, cool, and refrigerate until firm.
Prepare the Filling: Combine pork, black garlic, soy sauce, Shaoxing wine, ginger, sugar, sesame oil, green onions, chicken broth, and white pepper.
Assemble Dumplings: Roll dough into circles, add a cube of gelatinous stock and pork filling, pleat, and seal.
Steam: Arrange in a steamer lined with parchment or cabbage leaves, steam for 8-10 minutes.
