Instructions

In a skillet, melt butter over medium heat. Add garlic, onion, carrots, and celery. Sauté until softened (about 5 minutes).  

Stir in shredded chicken, chicken broth, heavy cream, thyme, black pepper, and salt. Cook until the mixture thickens slightly. Let it cool completely.  

Place a spring roll wrapper on a flat surface, one corner pointing towards you.  

Add 2-3 tablespoons of filling near the bottom corner. Fold the corner over the filling, tuck in the sides, and roll tightly. Seal the edge with beaten egg.  

Repeat until all wrappers are filled.  

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the rolls in batches until golden brown and crispy (about 3-4 minutes per batch). 

Remove and drain on paper towels.
