Ingredients:
For the Bulgogi:
1 lb beef sirloin, thinly sliced
¼ cup soy sauce
2 tbsp brown sugar
1 tbsp sesame oil
3 cloves garlic, minced
1 tbsp ginger, grated
2 green onions, chopped
1 tbsp rice wine (optional)
For the Gochujang Mayo:
½ cup mayonnaise
2 tbsp gochujang (Korean chili paste)
1 tbsp honey
1 tsp lemon juice
For the Pickled Daikon Radish:
1 cup daikon radish, thinly sliced
½ cup rice vinegar
¼ cup sugar
1 tsp salt
For Assembly:
Burger buns
Kimchi, chopped
Lettuce leaves
Instructions:
Marinate the Bulgogi: In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, green onions, and rice wine. Add the sliced beef and marinate for at least 30 minutes, or overnight for deeper flavor.
Prepare the Gochujang Mayo: In a small bowl, combine mayonnaise, gochujang, honey, and lemon juice. Mix well and set aside.
Pickle the Daikon Radish: In a jar, combine rice vinegar, sugar, and salt. Stir until sugar and salt are dissolved. Add daikon radish slices and let them pickle for at least 30 minutes.
Cook the Bulgogi: Heat a grill or skillet over medium-high heat. Cook marinated beef slices for about 2-3 minutes per side, until well-browned and cooked through.
Assemble the Burger: Toast the burger buns if desired. Spread gochujang mayo on the bottom bun. Add a layer of lettuce, followed by the bulgogi beef. Top with chopped kimchi and pickled daikon radish. Finish with the top bun.
