Healthy Dolmeh Recipe with Quinoa and Dried Fruits

Dolmeh is a traditional Middle Eastern dish, featuring grape leaves stuffed with a savory mixture of rice, herbs, and meat. Ingredients:

1 cup quinoa

1 cup brown rice

1 lb ground meat (beef, lamb, or chicken)

1 onion, finely chopped

2 cloves garlic, minced

1 cup fresh parsley, chopped

1 cup fresh dill, chopped

1 cup dried apricots, chopped

1 cup dried cranberries

1 tsp ground cinnamon

1 tsp ground cumin

Salt and pepper to taste

1 jar grape leaves, drained

Olive oil

Lemon juice

Instructions:

Rinse quinoa and brown rice under cold water.

Cook quinoa and rice according to package instructions. Set aside to cool.

In a large skillet, heat olive oil over medium heat.

Sauté onions and garlic until translucent.

Add ground meat and cook until browned. Drain any excess fat.

Stir in cooked quinoa and brown rice, dried apricots, cranberries, cinnamon, cumin, salt, and pepper. Mix well and let it cook for a few minutes to blend the flavors.

Place a grape leaf on a flat surface, vein side up.

Spoon a small amount of the filling onto the leaf. Fold in the sides and roll up tightly.

Repeat with remaining leaves and filling.

In a large pot, arrange the stuffed grape leaves in layers. 

Drizzle with olive oil and a splash of lemon juice.

Add enough water to cover the Dolmeh.

Cover and simmer over low heat for about 45 minutes, or until the grape leaves are tender.

Allow Dolmeh to cool slightly before serving. Enjoy warm or at room temperature with a side of yogurt or a fresh salad.

Tips:

For a vegetarian version, substitute the meat with extra vegetables or mushrooms.

Adjust the sweetness and tartness by varying the amount of dried fruits.
