Ingredients:
4 boneless, skinless chicken breasts
1 cup sun-dried tomatoes (packed in oil, drained)
1/2 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 teaspoon crushed red pepper flakes
2 tablespoons olive oil (or use the oil from the sun-dried tomatoes for extra flavor!)
2 cloves garlic, minced
Fresh basil leaves, for garnish
Salt and pepper, to taste
Instructions:
Heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add olive oil (or the oil from the sun-dried tomatoes) to the pan and sear the chicken for 5-6 minutes per side, until golden brown. Remove the chicken and set aside.
In the same skillet, lower the heat and add minced garlic. Sauté until fragrant, about 1 minute. Stir in the sun-dried tomatoes, letting their flavor infuse the oil. Add chicken broth to deglaze the pan, scraping up any bits stuck to the bottom. Let it simmer for 2-3 minutes.
Pour in the heavy cream, followed by the Parmesan cheese and crushed red pepper flakes. Stir until the sauce becomes smooth and creamy. Let it simmer for 3-4 minutes until it thickens slightly.
Return the chicken to the skillet, spooning the sauce over the top. Cover and simmer for another 5-7 minutes, until the chicken is cooked through and juicy.
Garnish with fresh basil leaves for a pop of color and fresh flavor. Serve with a side of pasta, mashed potatoes, or crusty bread to soak up all that delicious sauce.
