These golden, crispy rice balls are stuffed with a savory mix of spicy sausage and aromatic fennel, making them the ultimate party treat.
Ingredients:
1 cup Arborio rice
2 cups chicken broth
1 cup grated Parmesan cheese
1/2 cup cooked spicy sausage, crumbled
1/2 cup fennel, finely chopped
1/4 cup chopped fresh parsley
2 large eggs, beaten
1 cup all-purpose flour
1 1/2 cups breadcrumbs
Vegetable oil, for frying
Salt and pepper, to taste
Instructions:
Cook the Rice: In a medium saucepan, bring chicken broth to a simmer. Add Arborio rice and cook, stirring frequently, until the rice is tender and the broth is absorbed. Stir in Parmesan cheese and season with salt and pepper. Let the rice cool completely.
Prepare the Filling: In a skillet, sauté fennel until soft and fragrant. Mix the cooked fennel with crumbled sausage and fresh parsley.
Form the Arancini: Take a small amount of cooled rice and flatten it in your hand. Place a spoonful of the sausage and fennel mixture in the center and mold the rice around it, forming a ball. Repeat with the remaining rice and filling.
